Why is raspberry blossom honey so rare?
With its sunny forest clearings, the Harz region offers ideal conditions for abundant raspberry blossoms. But flowering raspberry bushes alone do not guarantee a honey harvest: rain or cool temperatures during the flowering period can restrict bee activity. This makes raspberry blossom honey a special rarity, with harvest quantities varying from year to year.
Does raspberry blossom honey taste like raspberries?
Not in the way you might expect from fresh raspberries or raspberry jam. The name refers to the blossoms from which the bees collect the nectar. Our organic raspberry blossom honey has a delicate, floral flavour with a subtle fruity note, while its gentle honey sweetness remains at the forefront.
What goes particularly well with organic raspberry blossom honey?
Its delicate floral flavour comes into its own on fresh bread or warm brioche. It adds a gentle sweetness to natural yoghurt, quark and mild desserts. It also pairs beautifully with creamy Brie or mild goat’s cheese, where the honey adds a subtle sweet accent to the savoury cheese.
What is the best way to store raspberry blossom honey?
Store our organic raspberry blossom honey in a cool, dry place protected from light, for example in a pantry away from the stove and heating. Close the jar tightly after each use so that the honey does not absorb moisture or other odours. There is no need to refrigerate it. This helps preserve its delicate aroma for as long as possible.
